Spain calls the kitchen still life the *bodegón*, and its first masters — Juan Sánchez Cotán in Toledo, the young Velázquez in Seville around 1618 — gave humble food the gravity other painters reserved for saints. Fish belonged to that tradition by necessity as much as taste: Lenten fasting, Friday abstinence, and a long Mediterranean and Atlantic coastline put sardines on tables from Cádiz to Galicia, salted, grilled over coals, or carried inland in barrels. Francisco de Goya returned to the subject around 1808–1812 in a small group of still lifes — among them a plate of golden bream — painting heaped fish as pale luminous forms rising out of darkness, rapidly and without sentiment.
