Chestnuts heap to the rim of a worn, rust-stained bowl — its slate blue-gray glaze the only cool note against all that amber and burnt umber — while loose nuts and curling golden husks scatter across the bare tabletop. A single raking light catches the crest of the pile, then falls away into near-black. Quiet, grounded, autumnal: the plain harvest given weight. Chestnuts were never a delicacy in Old World Spain — they were survival. Before maize and the potato arrived from the Americas, *Castanea sativa* was the bread of the northwest: the chestnut groves, or *soutos*, of Galicia, Asturias and León fed whole villages through winter, the nuts dried and milled into flour. The harvest is still marked by the *magosto*, the roasting fires lit around All Saints' Day. That humble sufficiency is exactly what the Spanish bodegón painters understood. Juan Sánchez Cotán in Toledo and Francisco de Zurbarán in Seville set plain food against a black ground and lit it like scripture, granting a cardoon or a clay vessel the gravity of an altarpiece.
